As Little Creek's Food and Beverage Director, you will oversee all aspects of food and beverage service, including restaurant management, quality control, procurement, and staff training. Essential Duties And Responsibilities
- Plan, develop and implement operational policies and goals for the Food and Beverage Department.
- Help plan and implement new food venues, including proforma analysis, equipment purchasing, kitchen and work flow planning and staffing requirements.
- Collaborate with Marketing to promote products and services performed to develop new markets, increase share of market, and obtain competitive position in industry, as well as in planning and arranging promotional programs and advertisement.
- Analyze information concerning facility operations such as daily food sales, patron attendance and labor costs to prepare budget and to maintain cost control of facility operations.
- Analyze department budget requests to identify areas in which reductions can be made and allocate operating budget.
- Confer with administrative personnel and review activity, operations and sales reports to determine changes in programs or operations required in the Food and Beverage Department.
- Direct preparation of directives to Food and Beverage Staff outlining policy, program or operations changes to be implemented.
- Review food and beverage lists submitted by subordinate staff to determine that sufficient items are ordered weekly; eliminate or add items to list.
Additional Duties
- Inspect food service facilities to ensure that equipment and buildings meet requirements of state and local health laws and internal regulations.
- Inspect and taste prepared foods to maintain quality standards and sanitation regulations.
- Promote Little Creek Casino Resort in industry and trade associations.
- Address customer complaints concerning service, food and beverages.
- Direct personnel management, training, interviewing, hiring and personnel evaluation.
Education and Experience:
- Bachelor's Degree in Hospitality / Restaurant Management, Business or related field from a four (4) year college or university.
- Eight (8) years progressive work experience in Food and Beverage operations, to include five (5) years Senior Management Capacity.
- Minimum of five (5) years working with financial documents including budgeting, food cost analysis and labor cost analyst
- OR equivalent combination of education and experience
- Class III Gaming License issued from the Squaxin Island Gaming Commission (must be able to pass a background check).
- Washington State Food Worker Card
- Class 12 Mixologist Permit
