POSITION SUMMARY
The Food & Beverage Assistant Manager, under the direction of the Food & Beverage Manager, assists in overseeing the daily operations of all Food & Beverage outlets, including the restaurant, bar, and kitchen operations. This position is responsible for supporting employee development, guest satisfaction, operational efficiency, regulatory compliance, and financial performance. The Assistant Manager helps ensure exceptional service standards, maintains quality and consistency, and contributes to the overall success of the department through effective leadership and teamwork.
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Assist in overseeing the daily operations of all Food & Beverage outlets and assume leadership responsibilities in the absence of the Food & Beverage Manager.
- Ensure exceptional guest service by addressing and resolving guest concerns in a professional and timely manner.
- Maintain compliance with all company policies, departmental procedures, gaming regulations, health and safety requirements, and applicable federal, state, and local laws.
- Train, coach, and develop team members on service standards, operational procedures, and company expectations.
- Provide ongoing performance feedback, employee coaching, recognition, and corrective action when necessary.
- Assist in recruiting, interviewing, onboarding, scheduling, and retaining qualified team members.
- Ensure cleanliness, organization, professionalism, and presentation standards are maintained throughout all Food & Beverage areas.
- Monitor labor costs and assist with scheduling to meet operational needs while maintaining budget goals.
- Supervise and enforce consistency in food quality, preparation, presentation, and service standards.
- Monitor food, beverage, and supply inventories and assist with ordering to maintain appropriate stock levels.
- Assist in controlling food and beverage costs through waste reduction, portion control, inventory management, and proper product utilization.
- Review and reconcile inventory, purchasing, and month-end reports to support financial and operational objectives.
- Oversee point-of-sale systems, liquor controls, product procurement, and item database maintenance under the direction of the Food & Beverage Manager.
- Coordinate equipment maintenance, repair requests, and replacement recommendations as needed.
- Promote a positive work environment that supports teamwork, accountability, communication, and employee engagement.
- Maintain confidentiality and safeguard company assets, records, and proprietary information.
- Perform all other duties as assigned.

JOB SKILLS, ABILITIES, AND QUALIFICATIONS
- Minimum of four (4) years of Food & Beverage experience, including at least two (2) years of supervisory or management experience.
- Strong leadership, organizational, problem-solving, and decision-making skills.
- Working knowledge of budgeting, inventory management, labor controls, and profit and loss statements.
- Excellent customer service and guest relations skills.
- Ability to prioritize multiple tasks and adapt to changing operational needs.
- Ability to effectively coach, motivate, and develop team members.
- Experience working with diverse groups of people and fostering an inclusive work environment.
- Ability to perform the essential functions of the position with or without reasonable accommodation.
- Must be at least 21 years of age or older.
COMMUNICATION SKILLS
- Bilingual in Spanish - preferred but not required.
- Must possess Basic Essential Communication Skills:
- Oral Communication – verbal interaction of information to a group or individual.
- Written Communication – exchange of information in the form of email, letter, etc.
- Non-Verbal and Visual Communication – communicating without using words. Normally involves using hand gestures, facial expression, and eye contact to get message across.
- Active Listening – understanding guests/team’s point of view and be confident in expressing their concerns while actively listening to the other.
- Contextual Communication – understanding situation and ensuring responses are clear to reduce potential misunderstanding and confusion.
EDUCATION & TRAINING
- High school diploma or equivalent (preferred).
- Associate's or Bachelor's degree in Hospitality Management, Business Administration, Culinary Arts, or a related field preferred.
- Equivalent combination of education and experience may be considered.
CERTIFICATE & LICENSES
- Ability to obtain and maintain a Cahuilla Gaming License and submit to random drug/and or alcohol testing.
- Ability to obtain and maintain a valid California Driver's License.
- Food Handler Card (required).
- Responsible Beverage Service (RBS) Certification (required).
- ServSafe Manager Certification (required or obtained within 90 days of hire).
- TIPS Certification (preferred).
- Completion of all required Casino Essentials and departmental training courses.
- Successful completion of Title 31 training.

- While performing the essential functions of this position, the employee may occasionally be exposed to outdoor weather conditions and is required to move throughout the casino property. The employee may also be exposed to a smoking environment.

- If none of the applicants should meet the stated qualifications, applicants whose education and experience are less than the stated requirements, may be interviewed and hired provided the applicant hired submits a formal written training plan within (30) thirty days which can be completed within a “reasonable time” agreed upon by the supervisor and the applicant. Applicants who are hired and fail to meet the agreed upon formal training program, will be discharged upon failure to complete the specified training as scheduled.
