Compensation: Defined Benefit Pension Plan

The Director of Food and Beverage reports to the General Manager. He/She will oversee the Food and Beverage operation and provide direction with the assistance of department heads. 

Essential Functions

  • Ensure compliance with the applicable Tribal, Federal and other laws and gaming regulations and Kickapoo Lucky Eagle policies and procedures.
  • Ensure the highest possible standards of guest services by properly listening and responding to guest and team member concerns and questions.
  • Direct, manage and develop all restaurants, food venues as well as oversee banquets and catering.
  • Create, develop and monitor new concepts and ideas for venues.
  • Develop a business plan that will support company initiatives and enhance quality and service, associated costs, team member development, retention strategies and productivity benchmarks.
  • Assist in the creation, development, and implementation of an effective strategy designed to maximize profitability by ensuring revenue opportunities meet or exceed expectations while prudently utilizing available resources.
  • Ensure appropriate number of qualified team members are recruited for and retained to ensure products and services offered exceed the expectations of external guests and internal guests.
  • Monitor and ensure expenses remain within operational projections or approves variances as may be necessary to ensure property wide revenue producing capabilities are maintained.
  • Facilitate the flow of information throughout the department by organizing and presiding over regularly scheduled meetings with department team members and management.
  • Review operations and makes recommendations to General Manager. Participate in budgeting process for property.
  • Investigate and resolve complaints regarding food quality, service, or beverage quality.
  • Analyze volume in relation to anticipating staffing needs, targets market demographics; and projects sales.
  • Evaluate recent historical sales and purchasing data for the purpose of identifying purchasing patterns and accurate cost of goods.
  • Monitor food preparation methods, portion size, garnishing and presentation of food in order to ensure food is prepared and presented in an acceptable manner.
  • Monitor budgets and payroll records and review financial transactions in order to ensure that expenditures are authorized and budgeted.
  • Monitor compliance with health and safety regulations regarding food presentation.
  • Establish standards for personal performance and guest service.
  • Manage, mentor, and develop a high-performing Food and Beverage Management team; delegate job assignments to direct reports and provide measurement of results and constructive feedback.
  • Review work procedures and operational problems and determines ways to improve service, performance and safety.
  • Organize and direct workers training programs, resolve personnel issues, hire new staff and evaluate team member performance.
  • Review menus and analyzes recipes in order to determine labor and overhead cost and assignment of pricing guidelines.
  • Monitor team member and guest activities in order to ensure liquor regulations are followed.
  • Arrange for equipment maintenance and repair along with services in waste removal and pest control.
  • Demonstrate and promote KLECH core values and MAD skills
  • Manage and maintain security of confidential information entrusted to position.
  • Attend and satisfactorily complete all required training as assigned.
  • Monitor compliance with Federal currency transaction reporting requirements, Title 31 requirements and IRS Currency Transaction Reports and property established Anti-Money Laundering policies. Maintain accurate MTL, MIL, CTR and SAR as needed.

Minimum Requirements to Qualifications: 

  • Must have a Bachelor’s degree in a business or hospitality related major.  Five (5) years proven experience as a Director of Food & Beverage in a casino may substitute for the degree requirement.
  • Must have previously held the position of Director of Food And Beverage in a casino.
  • Must have at least five (5) years of related F&B managerial experience in a high volume complex casino.
  • Must have multi-unit/venue experience.
  • Must have experience driving profitability through the knowledge and prior practice of menu engineering, effectively managing cost controls and payroll management.
  • Must have a stable job history.
  • Industry related start-up operational experience is preferred.
  • Food service sanitation training course certification is preferred.
  • Culinary certification and/or chef experience is a plus.
  • Strong communication skills in English both written and oral.  Spanish or other language skills a plus.

  • Ability to follow and comply with established Casino guest service programs.
  • In-depth knowledge of restaurant front and back of the house operations and good working knowledge of kitchen operations.
  • Extensive knowledge of food service equipment.

Physical Demands:

  • While performing the duties of this position, the team member is regularly required to stand, sit, walk, push, pull, bend for extended periods; reach with hands and arms; talk and listen on a regular basis.
  • The team member must be able to concentrate for prolonged periods. 
  • Specific vision abilities required by this job include close vision, distance vision, peripheral vision and depth perception. 
  • The team member must be able to communicate effectively in person or using telecommunications equipment.
  • The team member must have the hand-eye coordination and manual dexterity to operate a keyboard, touch-screen display, telephone and calculator. 
  • Frequently lift and/or move up to 30 lbs. 

Work Environment: 

  • Normal office setting and casino floor. 
  • Frequent walking and standing in a smoke filled environment and frequent contact with the general public.
  • Temperature controlled environment with varying noise levels. May be exposed to high levels of noise throughout the day. 
  • Extended hours and irregular shifts may be required including nights, weekends and holidays.
  • Must be able to perform under pressure and work long hours under stressful conditions. 
  • May be exposed to the risks associated in attempting to resolve issues with difficult guests and extremely irate staff members. 
  • May be exposed to various types of lighting including, but not limited to: artificial fluorescent lights, flashing lights, strobe lights, multiple colored lights, etc.
  • Travel may be required to perform one or more essential functions of this position.

Conditions of Employment:

  • Must be able to obtain and retain a KTTT Gaming Commission License, including successful completion of background check necessary to obtain and maintain license. Responsible to keep all documents current and valid at all times. 
  • Must be able to provide authorization to work in the United States.
  • Must be at least 18 years of age. 
  • Must have access to reliable transportation to commute to and from work. 
  • Must comply with KLEC handbook, internal policy and procedures, and gaming regulations set within KLEC.
