DESCRIPTION OF WORK:The food and beverage director oversees the day-to-day operation of a restaurant or other diningfacilities. Handles a number of administrative functions, from ordering food from wholesalers totraining employees. Good managerial and communication skills. A good working knowledge ofmeal preparation, food safety and nutrition complete the job skill equation.SPECIFIC RESPONSIBILITIES:1. Plans and organizes the activities of the restaurant, lounge2. Budgeting and financial planning, forecasting, accounting for and recording financial results,supervision of purchasing and supply inventory, development and implementation of policiesand procedures, and the effective training of all supervisory and support staff.3. Evaluate, implement, and monitor restaurant/lounge requirements such as; schedule assignments,employee developmental needs, budget assessments, profit/loss analysis and control, inventorycontrol, internal controls, guest service, and organizational/sanitation expectations.4. Develop, implement, and maintain all marketing plans to insure the highest guest service andprofit center levels. This includes employee incentives that continue to encourage teamwork andmorale.5. Directs, participates, and trains department supervisory staff in the selection and retention ofemployees, evaluations, time and budget management, scheduling, discipline, documentation,guest service, interviewing procedures, and staff training/improvement.6. Provide all staff with positive coaching/counseling to insure that performance levels aremaintained or exceeded. Create a positive and productive work environment for all staff andstrive to achieve 100% guest satisfaction.7. To understand and perform proper delegation effectively with all supporting staff members toensure that all assigned duties are completed in an efficient and timely manner.8. To routinely expedite all finished food and beverage products in accordance with thedepartmental policy and procedure. Maintain quality and consistency within all areas.9. Reports to work on time according to policy.10. Attend all mandatory meetings/trainings.11. Must maintain a well groomed appearance; be in appropriate business attire to include validgaming license at all times.12. All other duties as assigned by the General ManagerMINIMUM QUALIFICATIONS:EDUCATION: High School Diploma / G.E.D Two to Four Year Degree in Hospitality, management or related Field, or equivalentrelated experience.EXPERIENCE: Minimum of three (3) years management or supervisory experience in the food and beverageindustry or related field. Culinary background preferred.
The Food & Beverage Assistant Manager directs and oversees all Food Service operations for front of the house Food & Beverage. This includes wait staff, cashiers, bartenders and beverage servers. Monitor employee performance, insure excellent customer service and handle customer complaints.
