Under the direction of the Beverage Assistant Manager, the Beverage Control Clerk is responsible for maintaining an accurate and efficient inventory of all beverage related products that supply the Food & Beverage (F&B) Department venues and bars. The Beverage Control Clerk plays a key role in ordering, maintaining, stocking, tracking and adjusting all F&B related inventory at various Yaamava’ Resort & Casino venues while performing maintenance on all bar equipment and systems.
Essential Duties & Responsibilities
1. Maintains accurate and efficient inventory levels of products and supplies by managing vendor deliveries for all venues. Monitors all received inventory to ensure accurate quantity and quality meets established standards and specifications.
2. Orders all beverage related items directly from vendors for the entirety of Yaamava’ Resort and Casino. Ensures all beverage items received are rotated, stored and issued in accordance with operational standards of first in/first out (FIFO). Ensures proper changing of all kegs, C02 and Nitrogen tanks, as well as liquor bottles for all venues.
3. Completes and submits all beverage control related paperwork required by Accounting for record keeping. Monitors inventory daily to ensure adequate supplies are consistently on hand to meet projected needs based on established average levels. Handles and transports rare and highly valued liquor bottles while maintaining their quality and inventory accuracy. Maintains consistently stocked levels and an accurate inventory with an average value of $1.5 to $2 Million dollars’ worth of product.
4. Conducts maintenance and troubleshoots all Berg Systems (Liquor and Draft beer), Glycol Units, Keg room systems, and Pepsi equipment and Point of Sale (POS) machine issues.
5. Performs physical inventories as directed by Beverage leadership. Conducts reconciliations of variances. Adjusts average supply levels based on changes in inventory usage to ensure adequate stock is on hand while minimizing waste. Receives products and ensures products are properly dates in alignment with health and safety standards. Delivers beverage department products to internal and external customers as required and attains any signatures needed to ensure accountability. Accountable for reporting of safety violations and/or any real/personal property damage (including enterprise facility & structures).
6. Travels to off-site events and various Yaamava’ Resort & Casino venues to ensure offsite product deliveries are executed properly. Make off-site deliveries via van, flatbed truck and box truck to events and other San Manuel establishments away from and on the Reservation. Reviews catering/banquet event forms/menus, and review menus (as needed) with Chef’s & fills requisitions specific to products needed for food specials. Receives items requested for artists & entourage for weekly entertainment.
7. Reports all corrections and requests changes in the inventory control system as needs arise. Communicates with Purchasing, Receiving, Accounting, Beverage Management and/or Culinary management regarding inventories, transfers, and requisition concerns. Reports on any delivery shortages or miss-picks to Food & Beverage Management. Attends briefings/meetings & participates in training as required.
8. Cleans, prepares, and organizes all Beverage storage areas as assigned. Wastes out of date products and submits requests to have them removed from the assets of Beverage Control and Food & Beverage Locations. Holds responsibility for reporting of safety violations and/or any real/personal property damage (including enterprise facility & structures).
9. Performs other duties as assigned to support the efficient operation of the department.
Education/Experience/Qualifications
- High School Diploma or GED required.
- Must be at minimum 21 years of age.
- Minimum of six (6) months experience in a warehouse and/or inventory control operation required.
- Proficient in Microsoft Outlook and Word is required.
- Experience working with Eatec and other inventory tracking software preferred.
Certificates/Licenses/Registrations
- At the discretion of the San Manuel Tribal Gaming Commission, you may be required to obtain and maintain a gaming license.
- A qualified candidate/employee must have a valid driver’s license with an acceptable driving record as determined by the company’s insurance carrier.
- Must have and maintain a current Food Handlers Card or obtain within 90 days of employment.
